I used 2 tsp of almond extract and 1 tsp of vanilla. I added in 1/2 cup of sliced almonds and 1/2 cup of dried cranberries into the batter. When cooled I drizzled with melted white chocolate. They were delcious and would make a great gift. Great base recipe to try all different flavor combos!

Zucchini Brownies

Very good! So rich and dense that no one will know the have zucchini in them unless you tell them. I did peel my zucchini so it was not seen by my kids. A great use for the giant zucchini's from the garden.

Irish Cream Chocolate Cheesecake

Made for Thanksgiving and everyone loved this. I did increase the Irish Cream to 1/3 cup and used a large chocolate bar the I cut into large chunks to decorate the top. I put a pan of boiling water in the oven underneath the cheesecake and had no problems with cracking at all.

Bacon Cheeseburger Upside Down Pizza

This was good and made for something different for a change. I added fresh garlic into my meat while cooking it and some pepper. I added in some onion powder, garlic powder, and basil into the topping mixture. Left out the tomatoes and green peppers because I know my daughter will not eat them.

Green Bean Stir-Fry

These are really good. Did not have fresh greens beans so I used frozen that I precooked and drained. I can not wait to use this recipe this summer with fresh beans from the garden. I did double the sauce as others suggested and I thought that it turned out just right. May add alittle fresh ginger and chili flakes next time since I like a little heat.

Peanut Butter Pie III

Very good pie and easy to make. Rich without being overwhelming. I may try next time using some lighter products such as reduced fat peanut butter, light cool whip, sugar free fat free pudding and maybe a graham cracker crust. Overall great pie, make sure you let it chill long enough though to setup properly.

Delicious Ham and Potato Soup

Very easy to make. I added in leftover ham from Christmas and a little shredded cheddar cheese as well. Excellent, husband says this is the one to make from now on.
