Italian Spaghetti Sauce with Meatballs

I made some minor changes to this excellent recipe. I used fresh parsley in meatballs and sauce. Used 1 cup of milk for breadcrumbs to soak in before adding to the meatball mix. Rolled my meatballs in breadcrumbs before placing in 350 degree oven for 25 minutes. When I took cooked meatballs from oven, I addedto sauce and let it cook for 2 hours on low heat. So Good!

Roasted Roma Tomatoes and Garlic

Outstanding flavor with most tomato varieties! Have made this numerous times with different kinds of tomatoes. This time I used small Campari tomatoes (larger than Cherry, but smaller than Plum). Placed tomato halves (seeds side up) on jelly roll pan lined with non-stick foil. Placed torn pieces of fresh basil leaves on each tomato half. Sliced medium yellow onion and only 5 cloves of crushed garlic cloves then tossed in with tomato halves. Olive oil prinkled liberally over tomatoes, onions and garlic. 400 degree pre-heated oven for only 30 minutes.

Red Potato Chicken

Marinated chicken in dressing for 2 hours in fridge prior to placing in oven. Placed chicken on top of potatoes. Added zucchini, onions. I've had better and will probably not make again, because I'm not a big fan of that dressing taste.

Spicy Garlic Lime Chicken

This was perfect, and we can't wait to make again. Started the chicken in pan on stove, but DH was late coming home from work, so I put in 300 degree oven for 15 minutes and turned to "WARM" setting for another 15 minutes. I thought it would be dried out, but chicken breasts were extremely juicy and flavorful.

Tater-Dipped Eggplant

My husband is not a fan of eggplant, but loved this. I only used 2 T butter and it was still a little greasy for my taste. I will try again next time with olive oil. Also, added some breadcrumbs and garlic powder to mashed potato flakes.

Black Beans and Rice

Tailored this to my liking. Added a small can of tomatoes with jalapenos, doubled the cumin, used chicken broth instead of vegetable broth and tore up and added some fresh basil leaves toward end. This is a GREAT rice recipe! Thanks Robyn!

Linguine with Asparagus, Bacon, and Arugula

I don't know how anyone could review this as bland??? It was one of the most flavorful dishes! To "customize" to our liking, I added sliced cherry tomatoes and used whole wheat penne instead of linguine.

Mama D's Italian Bread

The closest Italian bread recipe I have found. I'm a born and bred NY'er and moved to Virginia in '05. Could not find good Italian bread, so I searched for good recipes and this was it. Even though I've since moved back to the Tri State area and still bake this bread. It's perfect!

Pesto

Pesto is one of my favorites! The pignoli nuts really make a difference to me (as opposed to walnuts that some recipes call for). I toasted the pignoli nuts before adding. Very good with grilled chicken breast or fresh pasta.

Best Ever Banana Bread

Tried an experiment and made two: Threw in a 1/4 cup semi-sweet chocolate chips in one of them, and a 1/4 cup crushed walnuts in the other. The chocolate one was gone in a flash, but the walnut one hung around for a day. Both were good, but the chocolate chip one was awesome!
