About this Cook
I am a new mom of one perfect little man! I live on a horse farm with my dream husband and I just love life! Now that I am home with a baby I seem to have more time to try different recipes. The goal is to expand our pallet and try things we wouldn't normally cook. We both come from the traditional meat and potatos background but want to experience other tastes.
My favorite things to cook
I LOVE cookies - although we are trying to eat healthy it's hard to resist making a batch of warm chewy cookies... mmmmm We also make cabbage roll casserole very often too! I guess that is our favorite dinner meal - any one-pot dinner is ideal.
My favorite family cooking traditions
My husband & I have taken on the tradition of cooking a Christmas eve feast for family and close friends. It's a nice evening for everyone to relax and enjoy some good food & drink!! We always have a main dish such as homemade lasagna then we add in the snackers such as sweet&sour meatballs, veggies with dip, spinach dip, deli meats, cheese, fruit, crackers, a ham ball an then there's dessert... homemade pies, shortbread, lemon cranberry loaf & church window rolls - yummers!!!
My cooking triumphs
Not any big enough to write about! Yet!!! Although I have mastered a pretty scrumptious shortbread recipe.
My cooking tragedies
I once tried to make an angel food cake... NEVER again will I do that! I put the cake in the oven then turned around to do up the dishes, not 10 minutes later my hubby taps me on the shoulder and tells me my cake is bubbling over. Bubbling over is an understatement! The cake was everywhere! My oven mitts were covered in cake mix after I removed the cake and the oven was covered in cake, top to bottom. It took hours to clean up that mess. I have no idea what went wrong, I followed the directions - it was from a box! How I could screw that up I don't know!

Lemon Orzo Primavera
I changed things a little so maybe if I followed the exact directions thingswould have been different. Here's the way I did this. I boiled the orzo until it was almost done, drained then set aside. Then I started cooking the veg. in the oil and lemon. Just as the veg was getting tender, I added the orzo and some chicken stock and continued to cook until the orzo was ready. I added small amounts of stock as I went to get the perfect consistency.

Baked Haddock
This recipe was quick, easy and yummy. I may add some extra seasoning next time as I thought it needed a little something extra but still worth the 4 stars. I also agree with the other reviews that you MUST use the wire rack.

Grilled Shrimp Scampi
This recipe was so easy and oh so tasty! We LOVED it. I used dried parsley as I didn't have any fresh and I also used the red pepper flakes as suggested. I loved the spice and I will continue to use the red pepper flakes for added heat! I also used a bit more lemon juice than called for. This recipe was so good I'm making it again tomorrow!!!
