I brushed eggwhites onto the crust and mixed 3 eggs into the cream before pouring over the peaches. I also let the pie rest for about 15 minutes and then was able to add more of the cream mixture before baking. This recipe will leave you with WAY more cream than needed for just one so plan on making more pies. Its a GREAT hit with everyone and none will go to waste!!!
