This is a great recipe! I substituted corned goose breast for the corned beef, my guests didn't know the difference. Definitely a do again recipe.

Poblano Chicken Enchilada Casserole

Really quite good! Not hot a my wife was concerned but a balanced mixture of flavors. I would even use more poblanos and maybe another jalapeno to amp it up a bit. Great recipe that can be tweaked to meet individual tastes.

Ground Beef Bar-b-que

A little messy to make, it was almost too soupy for the burgers to hold together. I think you need to cut back on ketchup, dice the onion instead of grating it.

Anaheim Fish Tacos

A kickin' great recipe! I had to use poblanos, the only fresh chili's in my area. It is a little soupy but that can be remedied by draining before serving. I would like to try this recipe with habaneros and some chili powder next time. Makes an ample amount.

Sarge's EZ Pulled Pork BBQ

What an easy recipe and really good too. I served this on Argentine Chimichirri Bread buns. A real hit with all pork lovers! I did add 1 teaspoon of liquid smoke to the recipe.

Argentine Chimichurri Bread

Although this is a bread machine recipe, I used my Kitchenaid with the dough hook. I substituted Argentine Aji Molino chiles for the cayenne (they have a very smoky, earthy flavor). I actually made this bread into buns and baked at 350 for 20 minutes and allowed the buns to cool in the oven (to assure they got baked all the way through). I sereved them with BBQ pulled pork. What a sandwich!

Deer Jerky

This is an oustanding jerky recipe. You can tweak it to meet your taste, add some chiles to it to spice it up. It should work well with all meats, I used it on duck (mallards and bluebills)
