Mexican Baked Fish
Very, very good. I used swai/basa (a mild white fish) and my kids and husband loved it. For extra kick, I made it with Monterrey Jack Cheese instead of cheddar. And it took 25 minutes for the fish to flake. A definite keeper.

Delicious Ham and Potato Soup
I used 1/3 C. Parmesan cheese because we aren't big fans of American cheese, plus it gave a nice bite to it. I cut the celery and added 3 large carrots, chopped, instead. It was really delicious! Great with a salad.

No Bake Key Lime Pie
Fabulous! This turned out beautifully. As other people had recommended, I waited to add the cream stuff til it had cooled a bit. Also, I froze it to harden it in time, and it turned out great! Thanks for a delicious recipe!
