Enchilada Stack
This was pretty tasty. I used a can of enchilada sauce mixed in with the meat to save time and we topped it with some sour cream. My 3 year old asked for seconds and she NEVER does that!

Idaho Tacos
We make these all the time! They're so simple to do. I usually just top the beef with shredded mexican cheese and sour cream, though we have thrown on some canned corn before and had good results.

Easiest Eggplant
These were delicious! I added some grated parmesan/romano cheese to the bread crumbs and I added some crushed garlic to the mayo for some extra flavor. I baked them in the oven and they turned a beautiful golden color. We had them with some tricolor rotini and diced tomatoes and it was a huge it! Thanks!
