About this Cook
I'm the director of a private school. I work long hours. The way i like to wind down is in the kitchen. I was always sitting on the counter as a little girl, watching my mother work her magic in the kitchen. Now I see that in my youngest daughter.
My favorite things to cook
First and foremost would have to be mexican food. From enchiladas to carne guisada. I also love to grill. But my passion lies within baking. Brownies, cakes, pies and cookies.
My favorite family cooking traditions
Making tamales for Christmas has got to be my favorite family cooking tradition.
My cooking triumphs
I feel triumphant every time my family asks for seconds.
My cooking tragedies
The very first time I cooked a turkey for Thanksgiving dinner, i forgot to remove the bag containing the neck, liver and gizzards. My dad saved me the embarrasment by removing it before any one else could see it.

Mighty Matt's Kick-Butt Chili
My family loved this chili. I did make a couple of changes. I used beef broth instead of water, and added an additional 1/2 tsp of cumin. The pinto beans I used were fresh (not from a can)which I think made a huge difference. I also added a diced green bell pepper. Topped with cheddar cheese and served with cornbread. Will definitely use this one again :)

Marshmallow Fondant
This is a great recipe. The fondant was really easy to work with. My first batch was not so great, but my second batch was a success. I didnt use any of the butter. Instead I used non-stick cooking spray. Will be using this recipe again real soon!
