Roast Pumpkin and Feta Risotto

Absolutely terrific. This is a more complicated recipe, but not impossible if you're good at following directions. It was definitely worth the effort!!

This recipe was great! Contrary to the few reviews below which didn't like it, I think if you put in the 1 teaspoon of the salt and baking soda there won't be a problem... It turned out quite nice on the first time. We put in 4 cups of rhubarb (as ours has done plants amazingly well this year) and then bumped everything up a little. I would probably up the amount of oats as one other person suggested to make it a little thicker. This was a great recipe that I will definitely make again.

Pumpkin Rolls I

These are the best crescent rolls I've EVER had. They don't taste like pumpkin at all, but they are awesome crescent rolls. YUM!

Pumpkin Soup the Easy Way

Completely awesome! I used a block of cream cheese instead of the cream (that's what I had in the house at the time), which worked ok, but I'm making it again tomorrow with cream and am looking forward to it. This is a hit!

Pumpkin Casserole

This is TERRIFIC. I made it several times over the Thanksgiving/Christmas holidays, and each time at least one person asked for the recipe. Delicious. I have experimented with adding less sugar (or substituting Splenda) and used regular flour with a bit of baking powder instead of self-rising flour. Every time it's been terrific!

Quick Pumpkin Pudding

This was pretty good. Very easy to throw together. You can easily substitute skim milk for the evaporated milk. I used nutmeg instead of cinnamon (our cinnamon was temporarily missing!).

Blueberry Pumpkin Muffins

WOW! Yummy. I followed directions to the letter and got a delicious, moist result. I double the recipe and ended up with 12 muffins and 1 loaf of bread (which I just baked longer until the center was set). Will definitely make again, this is a keeper!

Cake Mix Cookies IV

I love this recipe, although it turns out a little different each time. I added oatmeal to the recipe this time, but then needed to add water to get the mix moist enough to spoon onto the cookie sheet. I also added chocolate chips. My favorite combo was devil's food cake mix, oatmeal and butterscotch chips. Yummy!
