Addictive Sweet Potato Burritos

This was very yummy and different. I was pleasenty suprised that I liked it so much. I agree with others that it is hard to mush the beans after they go into the pan, I ended up dumping the beans, onion and all into the food processor to mush. The sweetness of the sweet potato went great with the tangyness of sour cream. This is definately going into my go-to-dinners cookbook. I wanted to use blackbeans instead of kidney beans but didn't buy enough, so I used a mix. It turned out great.

Tofu and Veggies in Peanut Sauce

I originally gave this 4 stars because I didn't like how the tofu turned out. After freezing and thawing the tofu, on the other hand, the tofu is much better and meatier. I have to switch my rating to 5 stars because I gave it 4 stars 2 years ago and since then I make this recipe ALL the time and love it...so I think it deserves 5. I make it with whatever vegies I have on hand though, which usually ends up just being broccoli. Freezing the tofu first is a must though.

Pizza Dough I

We have been making this dough for over a year and love how easy it is. The dough is VERY thick though, so in order for it to not turn into a loaf of bread with some toppings, you have to roll it really really thin. We have started cutting the yeast in half though which seems to make it into regular pizza dough that isn't quite as thick.

Vegetarian Chili

This is absolutely delicious just the way it is. I don't like that much heat so it is just spicy enough for me, if you are used to heat you might want to adjust the spices. I am a vegetarian and my husband isn't and he usually complains about recipes without meat but raves about this one. He has told everyone who will listen about how great my chili is. The only change that I made is that I cook it for about an hour. I find that it isn't quite done at 30 minutes. This is so easy and good.
