Uglies
These were great and a kid-friendly meal. When I asked my 4 year old if I should make these again, he responded with "Every Day." =)

Campbell's(R) Easy Chicken and Cheese Enchiladas
I was a little skeptical at first. But this recipe sounded like something my boyfriend's mom used to make that he loved... so I decided to give it a whirl. It was suprisingly yummy. Different than my traditional enchiladas... but deliciious nonetheless. For those looking for a little more kick... use a medium or hot salsa.

Brown Sugar Meatloaf
I didn't read the reviews a head of time... so there are a few things that I migt have done differently (i.e. put the sauce on top)...BUT it did still turn out okay. My boyfriend thought is looked "interesting," but after he tried it he thought it was suprisingly good. Also got a thumbs up from our 3-year old. =)
