Everyone at my house loved this! We generally spend Sunday's together and we often use the afternoon to cook together for the Sunday dinner meal.And every time we would make the meat version of Moussaka, it would take us all afternoon anyway (as I really enjoy the eggplant slices very well baked on both sides) so the length of time involved did not dissuade me. I agree with a previous comment: good food takes time. I followed much of the advice about roasting the veggies as well as advice concerning substitutions to lower fat and remove some of the dairy (Thanks everyone!). Fresh fragrant herbs from our farmers market made this dish an event. I will definately make this again and I am adding it to my list of recipes for when company is expected for dinner!
