Curry Grilled Chicken
I make this weekly I double the amount of marinade and reserve some for drizzling over the cooked chicken on a bed of rice. I thicken it before drizzling over. Yum

Fried Onion Rings
Why are these soo good?! i loved the batter it was simple and delicious. I did double the recipe and I used Peru sweet onions and Michelob Ultra. I will definitely be making these again!

Chicken Enchiladas II
Great base recipe. I seasoned the chicken with a chipoltle seasoning I had. I also used mexican cheese rather than the cheddar and melted it right into the sauce and put some inside of the enchiladas also. very tasty. I will use this recipe for a lot of experimenting.
