I have 3 children (5, 3, and 2). My husband and I own a cotton farm. He works long, odd hours, and I'm at home with the kids. I enjoy cooking, but don't have much time for it. When I do, it's usually convenience food for the kids...chicken nuggests, mac n cheese, taquitos...For the grown-ups, it's usually a meat (i.e. steak, chicken breast, pork chop), starch (rice, potato, pasta) and vegetable.
My favorite things to cook
One of my favorite dishes is Carolina pulled pork in the roaster. I make a huge pork shoulder and freeze the leftovers, which is good for a couple meals! I always make my own spaghetti sauce, and have a great recipe for vodka sauce.
My favorite family cooking traditions
My grandma is one of the best cooks I know. She has a FABULOUS homemade noodle recipe, which she is teaching to me. I've only made them by myself once, but I know that's one I'll pass to my kids. My mom doesn't cook a lot, but she does have a bbq brisket that she makes. When I make that, it's definitly a comfort food! And everyone always expects me to make Scottsdale potatoes for holiday meals!
My cooking triumphs
I made my pulled pork for my son's 1st birthday (65+ people) and everyone really liked it. That was an accomplishment because my husband's family are all country wives who cook everything from scratch! Last year I made little loaves of bread for all our friends, family, and business associates as Christmas gifts. Apparently they were a hit because I've already been asked what kind of bread I'm making this year.
My cooking tragedies
The last couple of beef roasts I've made have been TERRIBLE! I'm not sure what I'm not doing right, but whatever it is...YUCK!
