Mini Cheesecakes III
Excellent! I left out the lemon zest and juice. I like that this recipe makes a small batch because there are only 2 of us who like cheesecake. We ate these plain without a topping, and they were delicious.

The Big Easy Jambalaya
This was very good. I used precooked chicken instead of shrimp. Also used kielbasa instead of andouille sausge.

Spanish Rice
Very good. Substituted salsa for the fresh tomato because thats what I had on hand. Also left out celery. Worked well. Hubby who does not like rice couldnt stop eating it.
