About this Cook
I love to cook and take care of my family. Whether it's family gatherings or cooking at home. I cook with passion, but my real love with food is desserts. I'm absolutely obsessed with baking. I love to try new recipes with items I can find around the home so our treats are tasty but reasonably created. Other than cooking, and baking, I love to craft. Knitting, crocheting, sewing and fun crafts are among the many past times I enjoy. Books play a nice roll as well as games. General fun is to be had around my husband and I.
My favorite things to cook
Chicken. Baked Chicken, BBQ chicken, chicken tacos, chicken stir fry. You name the chicken dish... I like it.
My favorite family cooking traditions
Mexican and spanish dishes. Enchiladas, menudo, carne asada. and Pallea.
My cooking triumphs
Cheese cake, It's like my specialty to my family. I have experimented with pumpkin cheese cake for the holidays, and actually had one of my extended family members take a whole one home. He then asked if I was making some for him the next year.
My cooking tragedies
I splurged on a nice expensive mixture of nuts for my own "Microwaved Peanut Brittle". The mixture never hardened. And I ended up throwing almost 3lbs. of caramel nuts away. I wasn't heart broken over the money spent, but I really wanted easy made brittle.

Juicy Roasted Chicken
One of the best roasted chicken dinners I have ever made or tasted. I added 1 cup of white wine to the bottom of the roasting pan and some fresh sprigs of thyme. Was wonderful with steamed green beans and garlic mashed potatoes. Will make for years to come!

Banana Banana Bread
I used some over ripened bananas, and doubled the recipe. Apparently it wasn't enough. I made mini loaves to share and got calls for more the day after. I have a happy family when I make this. Thank you for this recipe.
