I live in Western Colorado and work from home as a Medical Transcriptionist. I grew up in Central Florida. I love cooking with our 2 kids and passing along family recipes/traditions.
My favorite things to cook
Anything Southern/soul food. I have a huge collection of Family Recipes and I love making things from my childhood to share with my kids.
My favorite family cooking traditions
Memories of visting my grandparents and my grandmother ALWAYS had something from scratch on the stove! She was a wonderful cook and she is dearly missed! My mom was a great cook and could really "scratch" together a meal when times were lean! Sunday breakfast was a tradition with my dad including fried biscuits, eggs, salmon, hash, etc.
My cooking triumphs
Making a cheesecake or having any baked goods turn out at this elevation.
My cooking tragedies
I "attempted" to make beef stew for my husband right after we were married. I decided to use a crock pot but did not brown the beef first. At the end of the cooking time we had a big bowl of veggies and A LOT of grease! YUK! But, bless his heart he tried to choke it down until I threw mine away and then let out a BIG sigh of relief!

Lime Cilantro Rice
We love this rice dish! I always double it and make it in my rice steamer. I add the lime zest, lime juice, and cilantro once the rice has completely cooked! Thanks for the recipe!

Super-Delicious Zuppa Toscana
I make this often. I always double the recipe. I also use 1 pound of spicy italian sausage and 1 pound of sweet italian sausage. This is a perfect copy-cat recipe!

Honey Roasted Red Potatoes
08/01/2009~These were good, just good. I followed the recipe exactly and the next time I make them I will double up on the honey and mustard. I may even use Dijon mustard or a honey Dijon mustard instead of the mustard powder. They were ever so slightly sweet. I WILL make these again. Thanks for the recipe.
