Frosted Banana Bars

Excellent way to use those old nanners. Moist and tasty. I agree with some of the other reviewers - skip the canned frosting. I used cream cheese frosting. I will use this recipe a lot, because we never eat all of the bananas that we buy! I also used a 9 x 13 pan and baked for 30 minutes.

Pumpkin Dump Cake

Really nice for a fall day with a cup of coffee.I made it by the recipe, and I don't think I would change anything except add some more pecans. I will make it again, it's delicious.

Very soft, very good! I added some vanilla. I also tried adding some jam to the top of some of them (not a good idea, trust me) I will make these again, they are easy and delicious.

Pumpkin Cream Cheese Muffins

Excellently yummy! Nice variety of textures and flavors and they are nice looking too. I also added cloves and nutmeg, but didn't change anything else. They are moist but light. I made them for work and they disappeared! I will surely make these again, perhaps even adding more than the 1/4 tsp of cloves and 1/2 tsp of nutmeg. Thanks for sharing!

Hot and Sour Chinese Eggplant

This is a really good quick way to prepare eggplant. I did leave out the vinegar and the salt and it was really delicious without it.I also added just a little garlic. I was trying to duplicate the stir fried eggplant i ate in China. I think I ate it there every day for two weeks! I will use this recipe again. P. S. I have used this recipe many, many, many times now. Sometimes I will make a whole batch of it just for myself! I love it...

Mexican Sour Cream Rice

Pretty good, I did not have any cilantro, used some cumin. I will make it again. I didn't think it was too dry as some of the other reviewers did. Chicken would definitely be a nice addition to make this a main dish.

Blackberry Peach Pie

Excellent! I used the basic flaky piecrust recipe from this site. I did use 4 tablespoons of tapioca in the fruit rather than the cornstarch. I will definitely use this recipe again. Oh, I also dotted the butter on the filling before putting on the top crust. Mmmmmm!

Butter Pecan Ice Cream

Creamy and delicious. I used the full amount of sugar. I did use all heavy cream, and I used four egg yolks instead of the whole eggs. It was a definite make again recipe. It doesn't taste like store brand butter pecan, and the color is different because of the brown sugar. What a treat. Made it for 4th of July and everyone loved it!

Banana Oatmeal Bread

This banana bread is moist and tasty. I was a little put off by the oatmeal, but it didn't alter the taste or the texture. I did make a few changes. As some of the other reviewers did I used butter rather than Crisco and added the half cup of applesauce. I added nuts rather than raisins. The next time I make it I will probably add nutmeg. But it really is a good recipe. I will use this recipe from now on instead of my old banana bread recipe. Thanks for sharing.

Special Buttercream Frosting

Woohooo! This is definitely the definitive buttercream icing. Texture is perfect and the taste is exactly what I have been looking for. I used half butter and half Crisco. I had no heavy cream, so I used half and half. This will be THE icing recipe I use from now on. Thank you, thank you!!!

Butter Bean Burgers

These were certainly easy to prepare and very good tasting. I didn't have any beans but great northern, and I only had TVP to use for the saltines. They turned out very well, will make again, maybe a little spicier.

Yikes!! These are dangerously GOOD! They won't last long around my house. I added dried cranberries to the last tray. They are delicious both ways. I will make these again and again. Thanks for sharing.

Chinese Pot Roast

Nice change from the usual pot roast. Used low sodium soy sauce and fresh garlic. The flavor is much more subtle than you would think from the list of ingredients. I served it with sugar snap peas and soba noodles cooked in the roast broth. Will make again!!
