Black Bean and Corn Quesadillas
My family really liked these. I used more onions and more salsa (probably twice as much). I folded the tortillas as recommended in an earlier review. We served them with low-fat sour cream and additional salsa. Will definitely make again.

Slow Cooker Chicken and Dumplings
My children loved this. I did the modifications as suggested in other posts: I added vegetables, omitted the butter, and seasoned the chicken. I cooked on low until 2 hours before serving, then added the quartered biscuits and turned the slow cooker to high. The biscuits were perfect. Next time, I think I will use boneless chicken thighs for a richer taste.

Baked Corn Pudding
I really liked the taste of this, but am I the only one who had to cook it much longer than the recipe called for? Next time I will start earlier.
