Slow Cooker Chicken and Dumplings

Coconut Poke Cake

Love it, love it, love it. I made a from scratch white cake. The more holes you poke the better! I used a big utility fork and wiggled it around in each hole to make sure the "sauce" actually gets through. My family is already asking me to make it again!

Italian Sausage Soup

oh so good!!! If you want to make this lower fat without losing the flavor I suggest buying the turkey breakfast sausage and just adding a teaspoon of fennel seed to give it that italian sausage taste without the fat! If you like a little spice put 1/4 teaspoon of crushed red pepper. I also used frozen spinach. You can put fun shaped pasta with a little extra broth or water so they kids will not turn their nose up.

Old Fashioned Coconut Cream Pie

I have made this several times and it has become a family favorite. I have used skim milk or coconut milk in place of the half and half. The coconut milk makes it more rich but the skim milk certainly taste wonderful also. I have also made it with flour or corn starch and it does not make a diffrence. I do recommend cooking the filling in the microwave and stiring it ever minute or so. Much, much easier this way.

Tater Tot Casserole III

This stuff is so good that even the pickest person would eat it. It sounds weird but oh so good. I use 1 pound ground beef, onion, garlic, half a bag of frozen veggies, green beans, half cup on milk, cream of mushroom soup, montreal steak seasoning, and an entire bag of tater tots. You will not be disappointed.

Best Ever Popcorn Balls

Very very good. It was hard not to eat to many! I did what others suggested and when forming the popcorn into balls I put my can of crisco on the counter, rubbed a small amount on the palms of my hands and fingers, grabbed a big handfull of popcorn and firmly packed the popcorn in my hand into a ball. No problems with falling apart!

Breakfast Casserole III

I used regular russet potatoes and not frozen hashbrowns. My hubby and I both agreed the regualr potates do not need to be substituted for hashbrowns. I peeled, cut up and boiled the potatoes until they were just soft enough to easily peirce with a fork. Then put the potateos in a pan with, butter, mild green chilies, and pepper. Cook it 5-10 minutes then layered everything per the directions. Definatly serve with salsa. My mother who does not like salsa actually agreed that salsa was good on it.

Best Brownies

Very, very good and only messed up one bowl! I added a cup of chocolate chips and raspberry extract. The chocolate chips made the brownie less cake like and the raspberry extract gave it a new flavorful twist.
