Chicken Enchiladas

I made this two nights in a row. The second attempt was much better. I had a whole lot of chicken mixture left over. I used white Mexican cheese and a LARGE can of enchilada sauce and it made all the difference. I also bought the 10 inch tortillas b/c the store didn't have any smaller ones. I have a family of four and I had enough chicken mix to make 20 enchiladas. I boiled a whole chicken. I will be making this again

Italian Bread Baked on a Pizza Stone

I need help. I think this would have turned out great for me, except I don't have a bread machine. I put it in my mixer w/a dough hook and it was very runny. I added much more flour to try to get it in a dough ball but my results were tough flat bread. Any suggestions?

Cocoa Rum Balls

They didn't taste as great as the reviews stated. I like rum but something just didn't add up here for me. I took the leftovers to a party and some said they were too strong. Needless to say there were plenty left over.

Mushroom Chicken Dijon

Very good recipe. I did take the tip and use a red pepper which really dressed the dish up. I also used a yellow onion because that is what I had on hand. After the chicken was done, I removed it from the pan and then sauteed the onion, mushrooms and red pepper in about 3 T butter. After I added the cream and mustard and let it simmer I poured it over the chicken breast.

This is as good as the Biltmore House Wassail mix,(which i was having withdrawals from until I found this recipe) Nothing is better on cold winter's night than to snuggle up with along with a good book or movie and a cup of this.

Cream of Chicken with Wild Rice Soup

Mexican Casserole

This was very good and so easy to make. I used what I had in my cabinet which was Mexican Style Stewed Tomatoes. After baking, I topped it with sliced black olives and chopped green chilies. DELICIOUS!

Rich and Simple French Onion Soup

Wonderful soup! The best French Onion Soup I've ever tasted. My husband complained it wasn't dark enough so I added a few drops of Kitchen Bouquet.
