I'm an avid baker, and I'm always looking for ways to "vegan-ize" my favorite desserts. I also love to experiment with my crockpot and play around with veggies all the while trying to please my meat and potatoes husband! Worth every minute.

Every Saturday morning I make my Airman cinnamon rolls.
My cooking triumphs
I was once asked to make some fruit tarts for a Bible study group. I thought it would be easy to make a few, so I agreed. I managed to make 4 of the most beautiful tarts - and it was only the second time I'd tried. I was so pleased how they came out and everyone enjoyed them.
My cooking tragedies
Once I was having a dinner party and made spinach and ricotta stuffed shells, smothered in homemade tomato sauce. I had the oven and burners going, and when I pulled the casserole out of the oven there was no counter space, so I put it on the range. I forgot it was on and burned the bottom of my casserole and just about ruined the entire dish. Oops! My guests still raved about it. There's advantages for cooking for dear friends.

Cajun Style Red Bean and Rice Soup
Because I'm a vegetarian I leave the meat out of this and use veggie stock. Sometimes I add a little veggie sausage, but mostly we eat it without. My husband loves it and it makes for an easy dinner. We added a little bit of red pepper flakes to give it a bit more bite.

Spice Cookies with Crystallized Ginger
I made these for a book group and they were a BIG hit. They are a little much for those who are looking for a milder 'ginger bread' taste, but perfect for those who love a spicy treat! They disappeared and were great with coffee.

Chocolate Chip Pumpkin Cookies
These were incredible and very moist. The only change I made was increasing the spices a bit to our personal taste. I halved the recipe, but still came out with about 4 dozen. I used a cookie scooper, which may have made them a bit small. Everyone LOVED these and the recipe leaves a lot of room for creative experimenting next time!
