Supreme Scalloped Potatoes

Reviewed: mar. 27, 2009
I make this all the time because it's quick to prepare if you chop the potatoes raw (and I don't peel them because the skin is healthy), follow the instructions and simply increase the bake time for 1.5 hours. I also use this as a main dish on meatless nights, but add more cheese. Very tasty!

Quick and Easy Alfredo Sauce

Reviewed: mar. 23, 2009
Great recipe. I took the advice of other reviewers and added 1/2 chopped onion and 2 garlic cloves to butter as it melted, and used less milk (about 1 1/4 cup). I also added some Italian herbs and a few red pepper flakes. DELICIOUS.

Italian Rice Balls

Reviewed: mar. 20, 2009
OH MY GOSH THESE ARE GOOD! My new favorite vegetarian entree! I used instant rice, with equal amounts of water and rice. I added extra Parm and some bread crumbs to rice mix for extra hold, and pepperjack cheese to the mix for some extra spice, as well as additional Italian herbs. I pan-fried with about 1 tablespoon of olive oil, which worked fine, and saved me from using a ton of expensive olive oil. They're delicious served with spaghetti sauce and a vegetable, because you get both the protein and starch in the balls themselves. TRY THIS RECIPE!!

Chocolate Chip Banana Muffins

Reviewed: mar. 20, 2009
Wow, these are the perfect snack muffins. They're sweet, but not overly sugary. You can eat them for breakfast without feeling like you're eating dessert. If you do want to make them more of a dessert though, they'd be good with a brown sugar/butter/cinnamon topping. OR you could even frost them. They def don't need any additions though--they're perfect as is.

Spinach Stuffed Chicken Breasts

Very tasty with a unique flavor. I used canned spinach and it worked okay, but probably would have been even better with the frozen, as the recipe suggests. I'll definitely make this again.

Rosemary Ranch Chicken Kabobs

Reviewed: feb. 4, 2009
This is the best chicken marinade I've ever used--it has the perfect amount of tang and spice. Only slight changes--I used 1/4 c. olive oil instead of 1/2, and added a little cayenne and red pepper flakes to give it an extra kick. I baked it with the marinade included in the pan at 450 for 20 minutes as another reviewer suggested and the marinade was delicious as a sauce on rice. Thanks for the recipe!

Chantal's New York Cheesecake

WOW. I don't even like cheesecake, and I loved this. My boyfriend was in awe of how much better a good, homemade cheesecake is than store-bought. I used the recipe for "Hot Fudge Sauce" from this site as a topping and it was fabulous.

Ty's Barbequed Chicken

Reviewed: jan. 12, 2009
Yummm...My brother is a picky eater, but said this was the best chicken he has ever eaten. I had sliced the chicken I used in half (thinner), so the cooking time was shorter--just keep an eye on it, as all grills are different. I'll never buy BBQ sauce again!

Simple White Cake

Reviewed: jan. 12, 2009
This cake was great! I beat the heck out of it between each step as other reviewers recommended (which was task considering I did it by hand--but totally worth it), and added cinnamon to the batter at the end. I baked it in a bunt cake pan bc that's all I had. I topped it with "vanilla glaze" recipe from this site. Sooo good, I'll def make again.

Rosemary Roasted Turkey

Reviewed: jan. 12, 2009
So so so so good. My family loooved this turkey on Thanksgiving, they went on and on about how good it was. I paired it with the "awesome cranberry apple sausage" stuffing recipe from this site--perfect combination. I used an oven bag, and cooked the turkey breast-side down for most of the time, then flipped it for the last 2 hours (for presentation purposes). This seemed to make the meat extra moist.

Steve's Chicken Noodle Soup

Reviewed: jan. 12, 2009
MMMM so much better than chicken soup from the can. I think adding bouillon is the key--I normally add about a tbsp of beef or chicken (it doesn't matter which one you use). I always use dried herbs, and they work perfectly. I also use regular spiral whole grain noodles (about half what is called for in egg noodles) bc I never have egg noodles on hand--I like them better than egg bc they give the soup a heartier taste.

Scalloped Potatoes and Onions

Reviewed: jan. 12, 2009
These potatoes are fantastic! Like another reviewer suggested, I first sauteed the onion in the butter with garlic, then added flour, brother, mayo. I also added parsley and paprika (~1/2 teaspoon each) to the finished sauce prior to adding it to potatoes. This will be my new scalloped potatoes recipe! Note: to make gluten-free, add cornstarch instead of flour, it works just as well.

This is my fav chicken recipe. I sliced a hole in the chicken from the top to the bottom, and stuffed it with the cheese rolled inside the ham. I love the flavor the white wine adds. Thanks for posting this delicious recipe!
