Bacon Chicken and Dumplings
I am kind of torn between 3 and 4 stars. I think this recipe is a really good base, but I did change some things after making it once. The soup doesn’t have much flavor, so when we made it the second time, we used almost twice the bacon and cut back a bit on the potatoes. We also put in some garlic with the potatoes and onions. We thought that the cubed potatoes were a little much, so we coarsely shredded them instead. The first time we used some frozen bread dough we had at home and the dumplings turned out great. The next time we used the biscuit dough like the recipe recommended and they didn’t seem to ever cook all the way through even through we let them simmer for longer than recommended. So I guess next time, we will probably use more bacon, add some garlic, shred the potatoes and use bread dough instead of biscuit dough.
