I love baking bread. I can't stand bread machines though, I like to get my hands into the dough and kneed it to perfection. I love to make Lefse. It is a delicious potato tortilla (for lack of a better word) that is Scandanavian in origin. My mom made it for us all the time growing up and now I make it for my family when we have leftover mashed potatoes. I brought my father-in-law a loaf of my cinnamon swirl raisin bread. He never compliments anyone and he took a bite of it and instantly praised it. I once made a rhubarb pie so terrible my husband took one bite and asked if I would be offended it he didn't eat it.
