Summer Corn Salad

This is my favorite summer salad. I don't change a thing on the recipe. Vadalia onion is the only onion to use. It is even better the 2nd and 3rd day.

I was looking for a quick biscuit recipe when I decided to try this one. It was fantastic! I did not change the ingredients at all. The only change I made was to not melt the butter, but to freeze the stick of butter and grate it (using a box grater) into the flour mixture. Stir this around and then add the milk. This process yields very flaky biscuits.

Easy Pumpkin Muffins

Really enjoyed this recipe. I used a carrot cake mix, added the recommended spices and 1/4 to 1/2 cup of water. The recipe made 22 muffins. So easy and very yummy. I've shared this recipe with several friends already.

Cottage Cheese Roast

This was wonderful. I used Special K cereal,5 eggs instead of 4, only 2 TLBS of oil, 4 Tlbs catsup, extra onion, green pepper and worcheschier sauce. I ground the nuts in the food processor. I would put parchment paper in the loaf pan for easier removal. Spread a mixture of catsup and BBQ sauce over the top 1/2 way through the baking process.

Reheating Pasta

My daughter loves fresh pasta when she gets home from school. To speed things up...I cook the whole box. Place single servings in small zip-top bags and pop them in the freezer. All she has to do is dump a bag onto a plate...microwave it for 1 minute then top it with some sauce and microwave it for 1 more minute.

Burgundy Roast Beef with Savory Sauce

Just a note...the recipe said to pour the reserved marinade over the meat after it was browned. It will cook with the meat.

Romaine Rice Tuna Salad

Very easy and super yummy. *Update* I crave this salad. I probably make it at least once per week. Only use 2 cups of cooked rice. My latest trial was to use quick cooking barley in place of the rice. It turned out great and seems a little more hearty and healthy with the barley.
