About this Cook
I had gastric bypass surgery 3 year ago. I have lost plenty of weight however, I had to learn to cook in order to maintain the weight. I have taken each recipe and adjusted it to make them lower in calories, and fat but not in taste.
My favorite things to cook
I enjoy cooking everything. Anything that is available I want to explore and cook it. Since I have taken this on I am enjoying it thoroughly.
My cooking triumphs
I have learned to subsitute for calories but not flavor. I use splenda (brown and white) to cutback on sugar. I also use 1/2 brown flour when appropriate. Each of the recipes I upload I have changed and altered for the better. I take pictures of each dish to assure what I think it shoud look like.
My cooking tragedies
To date I am still going strong. I have learned if I mess it up try it again. Although I made something with ginger the other day and the whole top came off. Now we cooks know there is no way around that so I just tossed it and began again.

Salmon Cakes II
I have made this several times and have not changed the recipe at all. They are always a hit. This is the first time I served them on top of a fresh baby green salad. This is perfect for a light lunch or a great dinner. Nicely done. The only thing I say about any and all recipes is after you add the basic seasoning play around with different flavors. Excellent!!

Honeyed Pork Chops
Very, Very good. I did not change a think other than using boneless chops. If followed the recipe EXACTLY and they were very moist and very good. The sauce is amazing. I served with some a nice side of rice and veggies with a nice green salad. Very Good.

Berry Cheesecake Parfaits
OK So I forgot to take pictures.. But this was absolutely amazing. The only thing I did different was try to cut out some of the fat.. ie I used 1% milk and sugar free cool whip, and low fat wafers.. Like I said in my profile I try to cut out as much as I can. But Let me tell you this were absolutely AMAZING. and very, very easy to make. Much better than traditional banana pudding and yummy, yummy For those of you who think it is to creamy one of two things happened. 1) You did not whip the cream cheese enough. 2) You did not whip the cream cheese enough. Remedy.... If you find it to creamy try adding a bit more vanilla pudding it will balance out the cream cheese. Do not give up on this try it again... It is worth it!!
