Sarah's Applesauce
I just made this recipe this afternoon, and it turned out very nicely. I used Gala apples, though, and I think next time I'll try it with a different kind of apple, because it was lacking a bit of sweetness/tartness that I like in applesauce.

Update---I've made this recipe several times now. The last time I made it, I didn't put in the suggested amount of cinnamon---I just dumped in as much as I wanted, plus I put in ground cloves. It needs a lot of spice to make the flavour come out. It was the best batch that I've made so far.
