I am a single mom of 4, and I am always looking for new things. I try to make things the kids will like and I am always experimenting and trying new things. Sometimes they like what I make and others they just look at me like "Are you kidding". Its a chore to keep them happy. My twins are 8 and I have a 6 year old and a 6 month old. The baby is easy to make happy but the older two well, not so much. If anyone has any good ideas for kids please feel free to send them my way.
My favorite things to cook
Italian dishes. I make a really good meatloaf. I guess I need to publish it on here. Anything with chicken. My kids love my chicken strips. I make really good green chili rellenos, a recipe I got from ex mother in law. She gives me good ideas to. We are alot closer now then when I was married to her son. I make a dish I call hamburger stir fry that my daughter loves. Its almost just like pepper steak but with hamburger. There are some more things just can't think about any more.
My favorite family cooking traditions
I make a Holiday Ham every Thanksgiving and Christmas. Sunday nights are designated Chicken Strips, Mashed Potatoes and corn. My 8 year daughter (one of the twins) set that up.
My cooking triumphs
My Cannelloni Florentine. I have been making it for a couple of years now, and have added and taken away to make it just right for my family. My own recipe for my meatloaf. Its called Kramers Meatloaf, I have been making it for several years. Chili Rellenos now.
My cooking tragedies
The first time I ever made Chili Rellenos was a bomb. Of course my kids will say anything that I make that they say Ewww to is a tragedy.
