Creamy Chicken and Wild Rice Soup

This was my first attempt at making a cream soup. Very, very nice. Served for our family Christmas Eve supper with homemade bread.

Very nice. I used whole wheat flour and used melted butter in place of the veg oil. Added blueberries which was very tasty. Only complaint was that the recipe didn't make nearly enough to feed us all. Yes they are hearty but my family LOVES pancakes so next time will double it.

Mama's Best Broiled Tomato Sandwich

We all loved these - the kiddies included if you'd believe it. Excellent way to use up the leftover tomatoes from the garden. We ate them on their own for lunch but they would compliment any kind of soup. Will be making these over and over.

Southwest Summer Pork Chops

Very nice way to serve porkchops. Cooked them in the griddle pan on the stove top. Tasty marinade and tender pork. Would make again.

Best Steak Marinade in Existence

Wow, this is good marinade. I did sub Montreal Steak seasoning for the blackpepper and salt. I hate to admit it but I think this marinade will replace my "old faithful" steak marinade.

Buttermilk Chocolate Cake with Fudge Icing

Really, really good and turned out not nearly as rich as I thought it was going to be. It was surprising light tasting. Made as directed except I used half oil half apple sauce instead of the full amount of oil. Also baked in a bundt tin which was greased and dusted with cocoa powder (as per a previous reviewer). Baked for a total of 50mins. Made an excellent birthday cake :)

Green Beans with Cherry Tomatoes

Excellent side dish - infact one of the better side recipes posted on AR! Would make again but probably go easier on the butter. Found it a tad greasy. Also used grape tomatoes instead of cherry toms only because they are in season and they taste so much better.

Mini Meatloaves

Really nice idea. I also like the fact that it calls for oats instead of crushed crackers. The loaves had a really nice texture I thought. Would make again.

Fluffy Pancakes

Very good pancakes but the recipe doesn't make alot. Will double it next time to feed the family. Very similar to Good Old Fashioned Pancakes on this site but these came out much fluffier.

Crumb-Coated Chicken Thighs

Amazing! Normally when I get asked what's for supper and reply "chicken thighs" there is usually the sounds of disgust from my kids and my husband usually replies "I'll eat them if I must". No one really enjoys them anyway I cook them...until now. These got a unanimous thumbs up and it was agreed I could make these again any time. I did double the ingredients (except for the salt which I left at 1tsp) for 8 thighs. I did find it still too salty so I'll cut the salt back even more next time. Excellent, excellent recipe.

Red Lentil Curry

I have to say I was REALLY impressed by this. My inlaws were coming for supper and I made this. It was excellent. Made almost as directed except I used ground ginger as I didn't have any ginger root. Used a mild curry paste and both my little kiddos loved it too. Served with basmati rice, naan and pompadoms. Will be making this again and again. Yet another excellent reason to eat lentils.

Spinach Bread

We really liked this. The middle of the loaf did sink in the bread maker but that didn't matter. It is very tasty and all the family ate it up. For personal preference I would have liked a bit more spinach so will add some more next time. Don't forget the pepper - it really makes this bread work.

Jay's Signature Pizza Crust

This recipe is superp! I have been using the same recipe for pizza dough for years and was never that satisfied with it. Thought I'd try this one and wow!!!! This is now my go to recipe for pizza dough. Looking forward to loving my homemade pizzas again.

Crustless Cranberry Pie

Excellent - everyone raved. Made exactly. The walnuts weren't to my taste, I would have prefered raisins, but everyone else liked the nuts. Would make again for sure.

Oatmeal Craisin Cookies

Wow these are good, so good. I did cut back on the sugar a bit but otherwise followed the recipe. The one thing I will say is the serving size is way off. I ended up with 4 dozen cookies. Not too bad though because now I have plenty for the freezer.

French Onion Soup Gratinee

"delightful" "lovely" were the words coming out of my husbands mouth while he ate this :) I made almost as directed but had to improvise homemade vegetable stock with half a chicken stock cube and we had swiss emmental in the fridge so we used that for the cheese. Would definately make again and again.

Black Beans and Rice

This was just okay for us. I made as directed and wasn't that impressed so I added a tin of tomatoes. It did lift the dish. I also used kidney beans as that was what I had in my cupboard. I had just the dish and my husband ate it with tortilla wraps. Good dish when pushed for time and short on cash.
