I am a busy woman but I like to cook. It is extremely relaxing to me.

Comfort foods that I grew up with like a pot of pinto beans, calabasita, and Mexican rice, new and exotic recipes, and desserts!
My favorite family cooking traditions
My mother is a Southern Belle who learned to cook for her Mexican husband back in the 60s, so she make some mean fried chicken and chorizo tacos.
My cooking triumphs
I haven't burned the house down and the majority of the meals are edible -- triumph enough.

Eggplant -- Easy, Good and Tasty
Very good! Next time, I'll salt the eggplant first (mine was bitter). This requires you to slice the eggplant and then generously coat with salt. You let it sit for half an hour in order to give the salt time to draw out the "bitter waters". You rinse and cook however you like.
