My Amish Friend's Caramel Corn
Great flavor! The biggest reason I did not give this 5 stars is because it was extremely difficult to get the caramel to coat the corn evenly. I tried pouring/stirring and I tried the paper bag method. I have found that the microwave method of making this (Microwave Caramel Popcorn from this cite) actually makes a more evenly coated batch, using a paper bag works and its faster and easier. Again, the recipe is great, but my biggest frustration is with getting the caramel to coat the popcorn. Will probably only use the microwave recipe from now on. I used 2 1/2 bags of microwave popcorn and baked for 45 minutes at 250 degrees.

Cheesecake Topped Brownies
I had such high hopes for these brownies, since they were so highly rated, but was far from crazy about them. To start with, it was hard to get the cheesecake mix to spread evenly over the brownie batter, even after I parbaked just the brownie mix for about 6 minutes, as another reviewer suggested. The result was the middle bars were mostly cheesecake and not much brownie. Secondly, the 45 minute cook time listed was far too long and the edges and bottoms were ridiculously dry. Third, possibly due to the brownie dryness, the cheesecake and frosting separated from the bottom when I went to cut and serve them. Argh! Finally, I was less than impressed with the cheesecake layer's flavor. It had the texture of cheesecake, but tasted overwhelmingly like the sweetened condensed milk and not like cheesecake. (This was even after refrigeration, as another reviewer suggested.) I would have given them two stars, but my husband thought they were pretty good, so I decided to give them three.

Molly's Chicken
This is a tough one for me to rate ... I made it just as the recipe states, but took the recommendation of some other reviews and (1.) used low-sodium soy sauce and (2.) increased brown sugar to 1/2 cup. I probably would have given this three stars, but my husband really liked it, so I've given it four. I can't put my finger on it, but it just needs something. The chicken was very moist and falling off the bone, but the sauce was sort of bland. Next time, I think I will try to make it with less sugar to see if has a stronger, better flavor.
