My Co-Chef Kate!
About this Cook
I'm a 37 yo sahm of 3, and I love spending time in the kitchen trying new recipes. I am not a gourmet cook, nor do I aspire to be -- I just love food, cooking, holidays, and the traditions that go with them.
My favorite things to cook
I am a HUGE casserole fan! My favorite of all time is the classic tuna casserole. I also love baking, but only simple things like cookies, bars, brownies, and so on. Every time I try a cake it falls apart, so I guess that's just not my forte! I also love salads of all kinds: simple green ones, fancy main dish salads, pasta salads, rice salads, fruit salads, you name it -- I love to create (and eat!) them!
My favorite family cooking traditions
Every Christmas, we make tons of sugar cookies with the kids. We smother them with cream cheese icing and let the kids go crazy with the Christmas color sprinkles. Also, every fall I make my famous pumpkin bars (with homemade cream cheese frosting). I bring those to every fall potluck and party and they are always a hit.
My cooking triumphs
My pumpkin bars w/ cream cheese frosting -- I haven't met the person who doesn't think they are to die for!
My cooking tragedies
Well, sadly -- I can't bake even a simple cake from a box without it collapsing...and my icing never looks pretty, it always looks like a preschooler did it!

Best Steak Marinade in Existence
The name of this recipe is spot-on! I've tried many different marinades through the years, this one gets raves every time. Definitely the best I've ever tried, bar none!

Baked Tilapia in Garlic and Olive Oil
Guess what? I didn't have time to marinate, but thought I'd go for it anyway. This was delicious, even without the marinating. The cayenne peppper added a wonderful slight zing.

Sexy Shrimp Scampi
5 stars because it passed my 3 major tests: is it simple/easy to prepare? Yes. Is it delicious? Yes. Do my kids love it? Yes. Toss it over some pasta, and presto you are done. : )
