Creamy Broccoli Casserole
Excellent! This recipe has a comfort food quality to it that I did not expect. I used 3 oz. of cream cheese and 1/2 C. each grated parmesan and shredded sharp cheddar cheese. Next time I'll make a dounle batch.

Red Enchilada Sauce
I added a small can of tomato paste and left out the chocolate and it was delicious!

Spinach and Leek White Bean Soup
Taking the advice of other reviews, I doubled the cumin, but later found that the flavor of it was far too strong and over powered everything else. The texture was chunky. Next time I would not use as much cumin and I would puree half the soup ti improve the mouth-feel.
