Baked Halibut Steaks

After one bite, my guy informed me this was "restaurant quality." For the flavor, I couldn't believe how easy and healthy this recipe was. It was a perfect week night meal--I'll definitely make this again. I used tilapia because that's what I had on hand, used fresh basil instead of the dried and left out the onions because I don't like them.

Christmas Breakfast Sausage Casserole

This was so good! My mom used to make this type of breakfast casserole for Christmas but she used toast, which always came out soggy. Eventually, she gave up perfecting it the toast and started using shredded hash browns. The crescent rolls in this dish were not soggy at all! They were perfect and added an unexpected taste to the typical breakfast casserole which my fiancé and I both loved. I recommended this one to mom who’s excited to give it a try!

Apple Cinnamon Oatmeal

This was a really great alternative to plain old oatmeal and very easy to make. I had to simmer mine a bit longer than called for in the recipe before it thickened to the right consistency but it was worth it. I’ll definitely make this again and will definitely be experimenting with different types of fruit and juices. I also sprinkled a little bit of Splenda on the top, but probably more out of habit than because it actually needed it.

Blueberry Flax Pancakes

These were good and definitely not what I was expecting for something that was packed with so much fibrous goodness! The blueberries added flavor where I wasn’t expecting it, which was a pleasant surprise. I mixed some extra frozen blueberries and Splenda for a topping which added even more blueberry-ness, which we both loved. They were also very filling and easy to make. Yum!

Oat and Herb Encrusted Turkey

We aren’t huge fans of sage or rosemary so I decided to use different herbs: thyme, oregano and garlic. I also mixed bread crumbs in with the oats on the recommendation of other reviewers. I also used half the spices called for because it sounded like A LOT to me, especially with the mustard. It smelled amazing while it was baking (hence the 3 stars) but my fiancé and I agreed that it was still too much once we tried it. The flavor was good but it was so overpowering and I wish I’d decreased it even more than I did. I’m not sure I’d try this one again, sorry.

Gnocchi Bake

We had never had gnocchi before but had been curious to try it. This recipe seemed like it would be perfect for gnocchi newbies so I gave it a whirl. I used turkey Italian sausage because I prefer it. And I’d meant to add some spinach because we both love it but forgot. I guess that means we’ll just have to try it again! I think my only complaint with this recipe was that I didn’t like what happened to the gnocchi when it was reheated for leftovers: it got mushy. Maybe that’s just what happens to it in the microwave? I guess I’m not sure, but I think the next time I make this dish I will make sure we have enough people to finish it so there won’t be any leftovers.

Pesto Cheesy Chicken Rolls

I made these last night and they were wonderful! I made some modifications after reading all the reviews and we both loved them and will definitely eat again. I used Muenster cheese because I had it on hand and substituted thin-cut chicken breasts, which were already thin enough to roll up and didn’t require any extra pounding. Then I dipped each roll in an egg/milk mixture and coated in Italian bread crumbs. I baked them at 375 for 30 minutes and they were absolute perfection.

Caramel Apple Pork Chops

I took the advice from reviewers who had baked their chops but other than that followed the recipe. My fiance was extremely nervous about this recipe and wasn't sure he would like it. But the pork chops came out so tender and juicy that he loved it. He was also concerned about the flavor of the sauce in conjunction with the meat but it was relatively mild and we both agreed that it enhanced the flavor. He's not usually a fan of fruit/meat together but this one was really good. We would definitely make this again.

Sage Pork Chops

Very good. Fiance and I aren't crazy in love with sage so I probably won't make this on a very regular basis. However, we do like the sage flavor for an infrequent meal and I would certainly turn to this one again. The pork chops were very tender and the house smelled incredible while they were being prepared.

Baked Spaghetti Squash Lasagna Style

This was very, very good. We loved it! I added some Italian turkey sausage to satisfy my fiance's need for meat. We had a lot of leftovers and reheated this lasagna for lunches throughout the week. I would definitely make this again.

Chicken Pesto Pizza

We loved this pizza! I used a garlic and herb pizza crust from Trader Joe’s which was very good. My fiancé wasn’t sure he’d like the pesto sauce on the pizza so I made half the pizza with regular pizza sauce and the other half with pesto. He gave each side a fair try and decided the half with the pesto was the better pizza. I didn’t have any artichoke hearts but I did add spinach and some pine nuts to the top of the pizza. The taste was incredible.

Bacon Popovers

These were very simple to make and smelled great while they were in the oven. I sprinkled some colby jack on top before baking but otherwise followed the recipe exactly. The outside was crispy and the inside was moist and very good. The fiance and I both agree that these popovers were quite tasty and would absolutely eat them again.

Penne with Chicken and Pesto

I'm not normally a fan of cream-based sauces but my fiance is and I love, love, love pesto so I thought this recipe might be a good one to try. We weren't disappointed! I mixed in a handful of sun dried tomatoes and some frozen veggies (green beans, broccoli, asparagus and edamame). He absolutely loved it and is looking forward to the next time we have it for dinner. I want to try it with less cream next time--we'll see if he notices. :)

This recipe was a hit! My fiance couldn't believe all the flavors that came from something with so few ingredients. The only alteration I made was in adding some olive oil at the end because it did come out dry...however, I halved the recipe for 2 people and that could have been the culprit. Will definitely use this recipe again.

Black Beans and Rice

When we sat down to eat this, both of us were expecting it to be healthy but not necessarily good and interesting to eat. Boy were we wrong! I added some fresh cilantro to the mix and the combination of cilantro and cumin was unbelievable. We used this mixture as a filling for corn tortillas and sprinkled a little bit of cheese on top. This will definitely become a staple recipe in our diets!

Jay's Hearty Breakfast Skillet

This was a very tasty treat. It was time consuming but definitely worth it. My fiance says there's never a need to go out for breakfast again because this skillet was just as good (if not better) than a breakfast at a restaurant. I drained most of the bacon grease so the food was not as greasy as it would have been at a restaurant and he liked it much more saying that you could taste more of the actual food instead of just the grease. He also said it reminded him of one of his favorite meals at our favorite diner in Chicago, "The Melrose" on Broadway and Melrose!
