I am newly married. My husband is a Type II diabetic so we are always looking for healthier alternatives. We are all trying to lose a few pounds. Our new shelter rescue dog, Lennie, is doing his part by getting us off the couch more to walk and play with him. My son is a 19 yr old college student and my stepdaughter is 12.
My favorite things to cook
I must admit that my specialty is down home Southern cooking. It is a guilty pleasure that we do not indulge in as often as I used to.
My favorite family cooking traditions
The night before Thanksgiving at my aunt's house. We all get together for a big pot of salmon stew and then start our baking for the next day. We have been known to stay up all night laughing and reminiscing about Thanksgivings past. I think the reason it's so special to us is because we lost my Papa on Thanksgiving morning in 1989.
My cooking triumphs
I am a very accomplished baker and make a mean brown rice!
My cooking tragedies
Pound cakes for me are a hit or miss thing. I can bake two on the same day and one will turn out perfect and the other will fall. Can't explain it!

Six Can Chicken Tortilla Soup
We add a packet of taco seasoning and a can of red beans to this as well and it makes it pop even more. Can also add a jar of chipotle salsa to make it even better.
