I am a mama of 3 healthy, beautiful children who I love more than anything in this world...they keep me going and inspire me to be a better person. I have been in a relationship with my boyfriend, Erik, for 4 years, and we are still going strong. He is a wonderful father to all of my children, and I love him with all my heart. He will be the man I marry, and live the rest of my life with...(hopefully) ;)
My favorite things to cook
Chicken taco's ( I make the BEST chicken taco's!!!), Various Soups, Curry Chicken Casserole, Banana Bread, Steak and Baked Potatoes, Yummy Salads, Pork Tenderloin with Dijon Marsala Sauce (from this site), BBQ, Fajita's, Enchilada's....those are just a few of my fav's!
My favorite family cooking traditions
Cheesy Green Beans during the Holidays, Cheesy Potato Casserole, Gulliver's Cream Corn and Honeycomb Candy. (all I can think of right now)
My cooking triumphs
Any night that dinner tastes good, and is not burnt, is considered a triumph to me!!! LOL
My cooking tragedies
Hmmmmm....well, I've burnt quite a few things, and there have also been times where I tried being creative and combining flavors that did not turn out good at all. But thus far, I haven't burnt the house down or anything (KNOCK ON WOOD!!)

Gulliver's Cream Corn
My mother has been making this FOR MANY, MANY years, and has always kept it as a "secret" recipe. She brings it to just about every pot luck dinner, simply because it is requested by everyone. Everybody LOVES it, and always asks her for the recipe, but this is one she will not give out. She thought she was only one of a few people in the world that had this recipe....I'm gonna have to break the news to her that her precious recipe is here for all to see...sorry mom!! =( ONE PROBLEM.... This version of the recipe says to use 2- 20oz packages of corn, but you should only be using one. It will not be creamy enough if you use two. If you're going to make a double-batch, (which we always do), then use 2 packages of corn, but make sure you DOUBLE the rest of the recipe. That is the ONLY change this recipe needs!!! I wouldn't add or omit a single thing (besides the msg for health reasons)! This is one recipe that does not need to be "tweaked" in any way. (This is a fantastic recipe, and I recommend it to everybody. It is NOTHING like canned cream corn, (which I dislike very much). This one is a FOR SURE keeper! You are priviledged to have this recipe!!)

Pork Tenderloin with Dijon Marsala Sauce
OH MY GOODNESS....THIS IS ABSOLUTELY POSITIVELY PHENOMENAL!!!! YUM! YUM! YUM! This is my second time making it, and it tasted even better than the first time!! I followed other suggestions by adding fresh garlic and baby bella mushrooms to the shallots, and I also did not add the mustard directly to the pork before browning. I just threw some salt and pepper (because the sauce is so good, it does not need other seasonings), and then browned it in olive oil. I also did all the browning, baking, and sauce making in a cast iron skillet like "naples" suggested. What a fabulous idea! Made for easy clean up, while flavoring the sauce so wonderfully!! The pork was tender and juicy, and the sauce.....oh the sauce!! You may want to lick the plate when you're done!!" The whole family loved it! Thank you Koalagirl!! I will be making this for many years to come!! (and thank you to all of you for your suggestions!)

Brazilian Chicken with Coconut Milk
This was very good! I wasn't sure what to expect, but thought the flavor collaboration sounded nice. It was definitely different than what our family is used to. It was a nice change from the same ol' meat, potato and veggie dinners! I did add salt and pepper, and used half the cayenne, and only one jalapeno, and it still came out a little too spice for the little ones. Great for reheating for lunch the next day!!!
