This was a really great recipe. I kept the basic spice ingredients for flavor but made some modifications: I used 80/20 beef so I did not need vegetable oil; I did not use the one can of crushed tomatos or green chilis because I did not have on hand--instead, I used a 7 oz. can of diced tomatos *with green chiles; used only 1 zucchini.
I also added one can of chili-seasoned beans and more spices for heat(about 1 tsp each of crushed red pepper and chili powder).
Great recipe to “play” with. With the basic ingredients (taco seasoning, spices and salsa), you cannot go wrong by adding or omitting different veggies (I am not a fan of bell pepper so I left that out and also used about ¼ onion). You can also choose different types of salsa-I used Southwestern made with corn and black beans. The tomato paste may also not be necessary—I rarely use paste so it was a waste for me to only use a little bit and then have to throw the rest of the can out.
