Creamy Black Bean Dip

I submitted this recipe and glad to see all the good reviews. Please note that you can use tomato paste instead of ketchup. Also, kick it up a notch with more chili powder and onion powder. Also good with powdered garlic. Make it really fresh by adding fresh chopped onion, freshed chopped garlic and fresh cilantro!

Cake with Buttercream Decorating Frosting

Excellent recipe...not very greasy at all. I used a mixture of vanilla extract and rum flavoring. Recipe makes a ton of icing...too much for only cupcakes or icing just the outside of a cake. Theres enough to ice between several layers. Because it makes so much, I am only giving 4 stars b/c I had a lot wasted for just cupcakes...maybe I should have read the reviews first and then I would have known better!

Buckeye Balls II

My husband helped me make these...definately a time-consuming recipe so having someone to help is great! I meticulously measured but the peanut butter and sugar mixture turned out very dry and crumbly. In order to make smooth and perfectly round balls, I added about 2 tablespoons of water before rolling into balls. The mixture was also so thick that I had to use my electric mixer (with dough attachment). **These are SO rich. Next time, I will definately make these much smaller.

Southwest Chicken

Great mix of ingredients. I gave only 4 stars because I made alterations--without my alterations, this recipe may have been too bland for my taste. While simmering, I mixed in one recipe of the "Taco Seasoning I" mix found on this website. This was great!!

Sugar Cookie Cutouts

Dough was easy to work with (I chilled dough overnight) and cut-outs kept their shape very well. However, cookies were very bland-tasting. I used a simple mix of powdered sugar, butter, milk and vanilla to make an icing that tasted well with the cookies. May make again with addition of more flavoring.

Terrific Turkey Chili

This was a really great recipe. I kept the basic spice ingredients for flavor but made some modifications: I used 80/20 beef so I did not need vegetable oil; I did not use the one can of crushed tomatos or green chilis because I did not have on hand--instead, I used a 7 oz. can of diced tomatos *with green chiles; used only 1 zucchini. I also added one can of chili-seasoned beans and more spices for heat(about 1 tsp each of crushed red pepper and chili powder). Great recipe to “play” with. With the basic ingredients (taco seasoning, spices and salsa), you cannot go wrong by adding or omitting different veggies (I am not a fan of bell pepper so I left that out and also used about ¼ onion). You can also choose different types of salsa-I used Southwestern made with corn and black beans. The tomato paste may also not be necessary—I rarely use paste so it was a waste for me to only use a little bit and then have to throw the rest of the can out.

Grilled Salmon I

This is the first Salmon I've ever cooked and is also the first Salmon I've ever eaten and liked! I did not use any lemon pepper since I did not have any. Also, instead of throwing out the marinade, I added just a bit of water and I boiled it for about 7-8 min. and then it made a great syrupy sauce to pour over the fish after it was cooked.

Pineapple Cheese Casserole

I used one can crushed, one can tidbits and one can chunks. Since some reviewers thought their casserole was too sweet, I reduced sugar to 1/2 cup. I did not have enough cheese so I was only able to use 2 cups. It was good but next time--I will not used crushed pineapple; I like big pieces better. I might also use 3 20 oz cans instead of 15...I like a lot of pineapple. I will probably keep it at 2 cups of cheese. One of my favorite parts was the Ritz cracker topping. I might make a little extra next time and mix some brown sugar (and maybe even some cinnamon and pecans?) into the mix. Overall, it was good. I've had it once before prepared by someone else. This is a great recipe and easy to "play" with...you can't really go wrong if you mix up the amounts of the ingredients!
