Strawberry Cheesecake Bites

I wanted to do it faster so I used a ziplock-style bag and cut the hole too big. Start over. What a mess I made and I'd do this mess all over again. There really are not enough left on the plate to share. Okay, one or two for DH...provided he gets home early...! Strawberries, cream cheese and chocolate? Pure TNT!! And I was going to put the berries into a salad...Silly me!

Best Spanish Rice

Followed Karen H's instructions to saute the rice until translucent along with the onions. I did add another 1/2 cup of chunky salsa. It worked beautifully. We loved the taste and the texture was excellent as well, with the rice being perfectly cooked. I look forward to doing this often!

Sour Cream Lemon Pie

Was looking for something lemony to get us beyond this rainy humdrum weather and this was the first recipe I found where I had all the ingredients. I didn't change the first letter. Texture is like a very creamy, rich custard with just the right amount of tartness from the lemon. We loved it. Both of us went back for seconds and DH took all but the last slice to work for coffeebreak. I look forward to an encore performance!! TY for sharing. Oh, shoot, I did change it...sorry. I used a Graham cracker crust instead of a pie shell.

Coconut Poke Cake

My coconut loving husband is already asking for another one of these. I used about 2/3's of a can of coconut "milk" and a whole can of sweetened condensed milk and tossed in 1 cup of coconut into the batter. This was perfectly sweet enough for us. As soon as I took it out of the oven I used a chopstick with the largest round end to poke holes for the combined milks. I used a large spoon and tilted the cake pan in order to assure the milks getting into as many of the poked holes as possible instead of having it run off to soak the edge of the cake. I'm posting a picture so you can see the holes in the cake. It was topped with an entire 8 ounce container of lite Cool Whip and sprinkled with toasted coconut. Since it was done in a 9X13 pan I shared with a neighbor who called and asked for the recipe and was stunned to learn it was a cake mix! After hubby's first serving, he mumbled something about "not sharing anymore cakes"!! Totally deelish!

Black-Eyed Pea Gumbo

This is a "baby, it's cold outside and I'm hungry" recipe for anyone who has spent time in the chilly temps and needs warming from the inside out! I followed the recipe with the exception of subbing the can of diced tomatoes for a can of tomatoes and okra, which gave the soup a real gumbo effect. Added a bit of salt and pepper as I do everything I cook, served with a loaf of AR's Amish White Bread and we had a perfect meal. Super easy to prepare, ingredients you have on hand lots of flavor and sticktoitiveness!! Will gladly do this again.

I made it as a side dish using 5 medium sized Gala apples to go with a pork roast and roasted veggies. The comment from DH was "you did NOT get this out of a jar"! Super easy and absolutely delicious!

Homemade Laundry Soap

My mom made this using Ivory Soap finely grated. Our clothes smelled so sweet and fresh. I haven't used it but would love to and also share with DD just to bring back the memories of the best smelling clothes ever! The price we pay today for detgergent would certainly compel one to give it a try!

Raspberry and Almond Shortbread Thumbprints

I owe you an apology! I found these last year and made them to go on my Christmas cookie plates for neighbors. I made them again in February because they looked beautiful for a Valentine's dessert. GK's and DH just loved them. I made them again in September for grandsons 3rd grade class. Not one has survived either occasion! Grape jelly, raspberry, strawberry and blueberry have been used with great success. I was just looking through my cookie list and saw them and knew that they'd be on this years cookie platters as well. My DH took Valentine Day cookie leftovers to work and i shared the recipe with 4 of the gals in his office. To say they are a favorite is an understatement. I'm softening some butter "as we speak"! Thank you for a proven winner!!

Peach Pork Picante

Perfect! Looking for something different and hit the jackpot!! Easy is an understatement with the availability of ingredients and quick to prepare. The peach preserves give it a surprise slight hint of sweetness and the taco seasoning was right on target. I made this for 3 adults and 3 GK's from 8 to 15. DH got up this AM and wanted to know if there was enough left over for him to take to work for his lunch. Well, yeah, but I was looking forward to having it for MY lunch. I conceded defeat, lovingly. ChristyJ, thank you. I look forward to doing this again!! Six thumbs up!!

Coconut Cream Meringue Pie

This brought back a lot of fond memories of the cream pies we had that my mom made for Sunday dinner desserts. I didn't have enough milk on hand for the 2 cups called for so I subbed with 2 cups of canned coconut milk. (Not the sweet stuff!) This pie is positively decadent! I had a slice for breakfast (cause I'm the Gma!) and the flavors have combined to make it even richer tasting. Refrigeration is key to making this pie over the top. Thank you so much for sharing and I look forward to doing this one often.

Breakfast Cookies

I've made them several times now and each time they disappear without a trace. I get about 20 medium sized cookies out of each batch so it's well worth making double. I made a double batch and wrapped them 2 each in plastic wrap and then put prewrapped cookies in one large freezer bag. This way, the children can go get a cookie bundle, toss it into their book bag and at snack time they have a delicious homemade cookie. My DH has taken them to work and I've shared this recipe with everyone in his office. They are even better when left to sit in an airtight cookie jar overnight . Can't say how they'd be after a day or so because they simply don't last that long in this house! Louise, thank you for sharing!!

Ryan's Reverse Popper Dip

Most excellent! I used only 3 jalapeno peppers, only because I was serving it to the children as well as adults, out of our garden and diced them VERY fine. Why is my oregano jar empty? Anyway, added a bit more cumin and used 1/3 fat cream cheese as that was what I had on hand. My GKs loved it and my DD asked for recipe after her first bite. Really, really good and I can see this as part of our Super Bowl celebration! Way to go, Cat!

Beef Barley Vegetable Soup

I followed Happyhousewife's suggestions and she is right on having a pot full. However, that was exactly what I was looking for. DH took some to work and when he heated it for lunch, several coworkeers asked if he'd bring in a copy of the recipe. Happy to oblige! This is delicious. Even better heated up. Served with hot homemade buttermilk biscuits one night and a homemade French baguette for another mealtime. This warms the innards and comforts the soul and will be a regular on our winter menu! Thank you for sharing!!

Basic Flaky Pie Crust

Ummm ummm good! I keep a small can of shortening in the fridge just for using in this pie crust recipe. I've shared it many times with family and friends. Reviews of my pies are over the top and it has to be becaue of this lovely crust! Thank you!!

Lemon Sauce I

Waaaaay back when I was working, one of my co-workers would bring in gingerbread with a lemon sauce on the side that was incredibly good. I asked for the recipe and got put off until I realized she wasn't going to part with it! Well, Ta Da, this one is as good as it gets!! Very similar to the one my co-worker made but IMHO, this one definitely has more flavor. I served it over warm gingerbread and we loved it. I have a bread pudding recipe on this site and very anxious to try it with that as others have mentioned. Ginger, this recipe totally rocks! Thank you for sharing!!

Breakfast Cookies

Lots of crunch! Followed the recipe as written. These are over the top with layer after layer of contradicting flavors. Raisins, crispy bacon, cornflakes and only 3/4 cup of sugar. If you're looking for a sweet cookie, this isn't it, but it does have that joyful combination of somewhat sweet AND salty. We loved them and I have no problem making them again! BIG thank you for sharing!!

Apple Pie Muffins

I did a fairly fine dicing of the apples which helped to spread them throughout the batgter. These are easy to make and my 8 year old grandson proclaimed them as his "new" favorite muffin! The cinnamon brown sugar topping was the clincher. The aroma wafting through my house was mouth-watering! Thank you so much!!

Chocolate Chip Banana Muffins

I found several muffin recipes to make to go into DD's freezer for her and the children to grab, nuke and go before school and work. Everyone who did a taste test of these said I could add more anytime I wanted. They are super simple to make, totally delicious with easy, on hand ingredients. Thank you for sharing!

Chocolate Chip Oat Bars

Now I know what Heaven smells like! Easy to make, simple ingredients and dynamite flavor. I made these for DD to have in her freezer so the kids could grab, nuke and go before school. I honestly thought there wouldn't be enough to go into the freezer when I had to shoo everyone away. DH ate 3 of them while they were still warm out of the oven. Thank you!
