Mango Relish
Wow! This is a great combination of flavors! Served with barbecued pork chops on the grill and it was the perfect accompaniment. Even I liked it, and I'm not usually a sweet salsa fan.

Make-Ahead Spinach Manicotti
Sooo tasty... and easy because the noodles aren't slipping around and breaking. Definitely one for our rotation!

Fresh Spring Rolls With Thai Dipping Sauce
I have always loved spring rolls and was so glad to find the recipe. I also put mint in with the cilantro. Sweet and Sour sauce is a great dipper, too. We all loved them! And so healthy, too!
