Thank goodness for a recipe that doesn't call for pineapples or raisins, just carrots! I love this cake, I was a little wary that it wasn't going to be moist since I used the big side of the grater, but it came out perfect! I did everything as instructed, except that I didn't add pecans and I used 16 oz. of confectioners sugar (for some reason I thought it said 1 box of c. sugar lol) and I forgot to add the vanilla in the icing. This recipe is scrumptious! *Before changing anything to the recipe try it out first, because in the end you are rating your recipe not the one that was actually provided* Thanks for a wonderful recipe!

I bought a big box of beef broth (32 oz)and used 2/3 of it, and for the flour, I only added 1/8 cup of flour. I also marinated my beef for an hour, in 2 T of: rice vinegar, hoisin sauce, soy sauce & worcestire sauce. Also, to the sauce I added 1 t of hoisin sauce. I am not very big on ginger flavor so I only used a piece about the size of 1/2 a cranberry. Boy, did this taste good!

This was awesome! Made it in a 13x9 pan and I used strawberries, blueberries and bananas, topped it off with whipped cream. DELICIOUS! Everyone at church wants the recipe.

I think I need to keep making. I made 2 loaves on sunday and they came out hard as rocks. Last night I made them again, looked better yet still a little hard. What can I be doing wrong?
