Vegan-Friendly Falafel

These were so good! I used canned garbanzo beans but otherwise kept ingredients the same. I prefer to bake vs. fry for health reasons, so they were baked at 375 until golden brown, about 20 minutes. I salted some zucchini til it was soft, rinsed and dried...then wrapped the falafels with the zucchini and some tomato chutney, tastiness!

Ok, I agree with many that this was a little bland. Nutmeg and curry powder really bring it to life. Used silken tofu to cream things up a bit.

Green Velvet Soup

I would rate the original recipe at 3 stars, I added some garlic and adobo powder which majorly amped up flavors....shredded parmesan would also really improve things, but I made this for someone who can no longer eat solid foods and didn't want to add anything that would make it more difficult for her to digest/swallow.

Basil Tomato Soup

Super easy and tasty. I used silken tofu instead of the whipping cream to cut down on the fat and add more protein. The soup was made for a friend with stage 4 cancer who is no longer able to eat solid food. The tofu gives her more protein and nutrients to keep her strength up.

Fresh Asparagus Soup

Love it, easy and great hot or chilled. I didn't have a problem with stringiness - not sure if people used too much of the tough ends of asparagus *hint: if you hold the asparagus spear by both ends an bend until it snaps, the bottom half where it snapped naturally should be discarded.* I also simmered the asparagus and onions, covered for about 15 minutes or until very soft. I added some fresh grated pepper, can't go wrong with that! Love it, will be making it often!

The Best Thai Coconut Soup

My client loves this, I've made it several times for him. To amp up the spice I use hot chili oil instead of the vegetable oil, and if you really like the heat you can use siracha. Using light coconut milk dials down the fat and calorie content without affecting taste. I usually serve chopped cilantro, lime wedges, bean sprouts, and sliced green onions as garnishes.

Tomato-Mint Quinoa Salad

I think there is just waaaayyyyy too much going on in this recipe. You have a lot of ingredients with their own unique and strong flavors but they don't necessarily compliment each other. It was edible, but I wouldn't make it again and honestly ended up throwing out half because I was sick of eating it. Sorry guys. I think the Southwestern Quinoa Salad recipe on a/r is much better.

Blackberry Cobbler II

Wow, soo good! This disappeared in a hurry! I also added cinnamon to both the dough and berry mix. I'm torn on the dough thing...I think it was great as is but extra dough wouldn't hurt...but I think 2x as much would be overdoing it.

Spicy Bean Salsa

Addicting is right! Made for a party I was hosting and attending. I didn't think it was that spicy, and could maybe use some cayenne pepper...but then some people said that it was perfect as is and I shouldn't change a thing. All in all, very enjoyable!

Baked Salmon II

Wow, this came out amazing. The guests were all raving about how perfect the salmon was. The party was a buffet setup and so I used 2 5lb whole fillets. The fillets were baked for about 30 minutes and were perfectly done. Definitely a keeper!

Papaya Bruschetta

Catered a mixer with this recipe. They had a very small budget ad I was looking for a recipe which was low on cost but still impressive. Bruschetta usually fits the bill for those requirements but I wanted to do something a little different than the norm. This worked perfectly, guests loved it, great for summertime serving. I doubled the recipe but only used 5 tomatoes. I think if you used the full amount the flavor of the papaya would have been overwhelmed.

Cheesy Acorn Squash

Nice way of preparing acorn squash that isn't a sweet recipe. I subbed out the celery for asparagus. Quick and easy. I would recommend cutting down on microwave time, or at least checking half way through. My squash did not need nearly that much time.
