Spicy Sweet Potato Soup

This was pretty good and very filling. I thought the ginger was a little overpowering. If I were to make this again I would reduce it to only 1 T. One thing I didn't like was that this soup didn't keep well. I tried reheating it a couple days later and it was more like mush instead of soup. I would probably only make this soup again if I was serving it to enough people to finish it in one sitting.

Roasted Sweet Potato Corn Chowder

Wow! Totally loved this! I added about 1/2 C cream at the end of cooking. I know some people didn't think there was enough liquid but I like the thickness of this chowder. I think it's perfect for a hearty warming chowder on a cold day.

Awesome Sausage, Apple and Cranberry Stuffing

I absolutely love this stuffing!!! I've made it a few times for thanksgiving. I actually used to hate stuffing before trying this recipe. I usually omit the celery because I can't stand the stuff. This recipe is FANTASTIC!! I can't rave about it enough!

Tiramisu Layer Cake II

I was so proud of this cake when I made it. It looked gorgeous and tasted amazing. All the different layers looked beautiful! I will definitely be making this again. Next time I will try making two coffee layers instead of one and will double the amount of coffee/liquer mix that's poured on the cakes.

Spicy Basil Chicken

I thought this was excellent. I used 2 chopped serrano chile peppers instead of 3 as some people said it was too spicy. It was just perfect for me, a nice kick but not overpowering. Will definitely make again. It was a little salty so next time may use garlic powder instead.

Tiramisu Layer Cake

Jenn's Out Of This World Spaghetti and Meatballs

This was very tasty but I did make some modifications. I only used about a tablespoon of sugar and 1 can of tomato paste. I stuck it in a crockpot and let it simmer overnight for about 7 hours. It did come out a bit oily so I may try buying leaner meat the next time I make it but the meatballs were SUPER tender and juicy! This smelled so good that it woke me up and I had trouble falling back asleep!

Garlic Chicken with Orzo Noodles

I thought this was really enjoyable, light and healthy. I didn't think it was too bland but I did cook the orzo in chicken broth instead of water and upped the garlic count a bit.

Lemon Cream Cupcakes

I really liked the density and moistness of these cupcakes. I added a few drops of lemon extract to boost the lemon flavor. I didn't use the frosting from this recipe and instead used the "Whipped Cream Cream Cheese Frosting" recipe on a/r with some added lemon zest and lemon juice. They turned out great.

The frosting tasted great but wasn't as firm as I had in mind. Perhaps if I had whipped the cream until it was firmer it would have held up better. I added lemon zest and lemon juice to it which gave it a nice zing.

Red Skinned Potato Salad

WOW! This is by far the best potato salad I've ever had. I omitted the celery cause frankly I can't stand the stuff. I love the smoked hickory flavor the bacon adds to this salad. A lot of potato salads have a real eggy taste but this one is perfect! I might try adding chives next time as I will be definitely making this again!

Tilapia Pitas

I thought the tilapia was very tasty but I wasn't crazy about the sauce. I think the anchovy made it too fishy and salty. I would recommend leaving that out to anyone who chooses to use this recipe though I probably wouldn't make it again.

Appalachian Slaw

I was pleasantly surprised with this recipe. The ingredient list is so simple I didn't expect to enjoy it as much as I did. I am actually not a very big fan of coleslaws and am very picky as to how they're prepared. I couldn't get enough of this - I almost ate a whole bowl by itself. If I was going to change anything I would probably use less salt next time.

Baked French Fries I

I didn't think these were that great. I have to agree with a few people that the temp and time are off because mine came out a little burnt as well but still salvageable. Despite that I didn't think the seasoning was all that fabulous. I would recommend adding salt to anyone considering making this though I don't think I'd make these again.

Lime Cilantro Rice

I loved this rice! I could almost eat it by itself. I did increase the amount of juiced used to the juice from 1 1/2 limes. Very very tasty and very very simple!

Key West Chicken

I thought this was good but I think the next time I make it I'm going to tweak the recipe a but. I did as others had suggested and increased the lime and honey but I still felt the lime was a little understated so I may try increasing it again next time. I also think I may try baking/broiling it so I can save the sauce to plate with the chicken to enhance the flavor. The people I served it to thought it was very good but I felt it could have used a little more oomph!

California Grilled Veggie Sandwich

Oh wow!!! This was AMAZING! I love food that makes my mouth happy! I don't even know where to start! The veggies and caramelized onions, with the warm crunchy grilled bread , and the tangy aioli and feta. The flavors melded together beautifully! Definitely a new favorite. It was also very easy to prepare! Loved it!
