Too Much Chocolate Cake

Divine. Try this with cinnamon chips for the perfect ending to a Spanish/Mexican meal. Whenever you see "Mexican chocolate" mentioned, it has cinnamon in it. Nuke a tub of dark chocolate frosting with a little cinnamon added & drizzle over the cake. Garnish with fresh rasberries.

Pecan Salmon Roll

A dash of smoke is a good idea. Pack this into a fish-shaped mold lined with plastic wrap. chill overnight. for an ultra-elegant presentation, slice 1 small cucumber paper thin,(slice blade of processor) Make overlapping "scales" on top. A bit of olive or pimento makes the eye.

Raspberry Walnut Baked Brie

Try splitting a small brie in 1/2 horizontally (a wire works well) & put the jam & walnuts inside. Then wrap with phyllo, puff pastry or crescent roll dough. This makes a spectacular presentation & its own "bread" to eat it with. bake @ 350 about 30 - 35 min.

This recipe is divine but I skipped the sugar. It definitely did not need it. It makes an especially refreshing cooler with Mexican, Spanish or Tex Mex buffets

Crispy Breakfast Quesadilla

for a more authentic version, drain 1/4 cup medium salsa put a spoonful on the eggs before folding. I tried it with pepper jelly & it was great.

Cherry Cream Crescents

Very good & easy. To make it prettier, pick the cherries out of the pie filling, using no more of the goop than clings to the cherries. Try mixing the goop with powdered sugar & drizzling on the finished rolls, or save the goop to use as a light jam on toast.
