I am a 911 dispatcher and love my job but hate the hours (nights). I am married to my best friend and a mother of 2 boys who are also quite picky eaters. I have been cooking for a long time, but it seems just in the last couple of months I am REALLY enjoying it and trying new and different recipes. I think this site is great and is full of wonderful ideas!!
My favorite things to cook
Chicken and cream cheese enchiladas, Chicken Tortilla soup, and I am really looking forward to Spring to get working on the barbeque again. I love to make all kinds of salads in warmer weather.
My favorite family cooking traditions
My mom was more of an instant mashed potatoes kind of lady. My mother in law has taught me how to make a lot of things from scratch, which I love to do if I have time. Lately I mix a bit of premade and scratch.
My cooking triumphs
Getting my picky sons to eat some of my newer endeavors. My biggest triumph I think would be making my oldest son's birthday cake a few years ago....It was right when the movie Chicken Little came out which of course is what he wanted for his cake. My local store did not have Chicken Little decorations so I made one from scratch...I even took a picture...I will upload it :)

Chicken and Spinach Ravioli
I don't think I am cut out for pasta making because I couldn't get the dough thin enough and it seemed to keep snapping back. The filling, however was DELICIOUS and I ended up using it with a garlic cream sauce over store bought noodles. I think I will try Melissa's suggestion of wonton wrappers next time :)

Cordon Bleu Chicken Rolls
What a great recipe! It was very good and easy to make. The only thing I did wrong was leave them in the oven a little too long. I used smoked ham and it infused the chicken and cheese with such a great flavor.
