After looking at several posts and different recipes on this site, decided this one was the easiest to follow. I do not have double ovens, so this recipe also allowed me to cook other items at the same time. I did set meat out for about 2 hours to warm; this did allow for through cooking. I used a 4.5 pound prime rib. I followed directions almost to a "t". I had no garlic so used an organic seasoning pack (onion and garlic). Turned out great - the topping did blacken, but did not deter from flavor. Also, when I removed the roast from the oven, I wrapped up with foil while it "sat" for about 20 minutes (and finished cooking my twice baked potatoes. I was so nervous about the 20 minutes of high temperature; but am glad I tried this out, and will use again.
