I've never made a cheesecake before. I don't even like cheesecake that much but this one is really good. (made it for my husband's birthday) I didn't have a springform pan, so I just bought the ready made pie crust. 1 is not enough! I had a ton of batter leftover and had to run to the store and buy another. I did use a pan of water under the cakes as suggested and followed the directions for the rest. Left it in the oven for about 4 hrs. after I turned it off. Both came out perfect. Next time I will invest in a springform pan I think.
