Egg Salad Sandwiches

Asparagus Casserole I

Took to a potluck and it all disappeared. I used 2 pkgs. very thin frozen asparagus (thawed) cut into 3" pieces, 2 cans mushroom soup and added a couple of layers of sliced hardboiled eggs. Bake just 'til heated through. Think I overcooked a bit.

Crispy Fried Chicken

I hadn't made true fried chicken in years, but this was excellent; followed recipe exactly, letting chicken sit after flouring. Hubby and adult grandson LOVED it. Thanks so much.

Orange Marinated Pork Tenderloin

This was excellent and very easy. I quickly browned the tenderloin before putting it in the oven for about 25 min; just prefer the browned presentation. The meat was so tender. I tried reducing the drained sauce and added some cornstarch as well as brown sugar as previous reviewer suggested. The taste was quite good, but never thickened - maybe not enough cornstarch. This one is a keeper!

Easy Pizza Sauce I

Very good, easy sauce. I had not tomato paste so used 2 8-oz. cans tomato sauce and reduced water to less than 1/2 cup, added spices and it turned out great! So glad to have this as I don't keep pizza sauce on hand normally. Thanks.

Enchilada Casserole II

Made with canned enchilada sauce, added a little cumin and diced onion w/chopped garlic. Also used ground turkey instead of beef and added extra cheese. Family loved it, but think I might try corn tortillas next time. Very good and easy.

Easy Chocolate Banana Cake

Excellent. As another reviewer, I used a devil's food cake mix, a little less cocoa and 4 small bananas. Very moist with just a hint of banana. Do not think frosting is necessary - just a sprinkling of powdered sugar.

Mushroom Cube Steaks

My husband loved this. I did add a little wine and water to deglaze the pan after mushrooms cooked. The meat needed to simmer 10-12 minutes to be cooked through. Wonderful flavor, quick cooking - will definitely make again.
