Spinach Stuffed Chicken Breasts
This was a good start, but I doctored it up some, since many reviews said it needed some doctoring. I fried down some onion, garlic, mushrooms and sundried tomatos. Once done, I sauted the spinach for a few minutes. I added that mixture to my mayo and fetta cheese. Stuffed the chicken breasts. I brushed on a coating mixture of olive oil, garlic juice, lemon juice and Italian seasoning. I baked at 400 for 20 minutes and then put under the broiler for the reamining time. Delicious!
