Butterfinger Chunkies

Yummy!! Making these right now. I would not call them "chunkie" either, nothing chunky about them other then using chunky pb - however - they are very good. The only other problem I've had, they started drooping through the wire rack because they are so soft. This batch I'm going to let cool a bit longer on the cookie sheet then transfer over. Thanks for a great recipe! Update: quote from my pb loving husband "these are the best peanut butter cookies ever" - They are VERY good...

Mock Lobster

This was a hit with the family. The kids loved dipping it in the butter. I did think it taste like lobster, my husband thinks its just "wishful thinking". I was afraid the marinade would be too salty, but it was fine. I think next time I will try it with fresh garlic and ginger. Thanks for a new one to add into the rotation!!

Chicken and Bowtie Pasta with Asiago Cream Sauce

Ok, this had no flavor what so ever. I added a bit of yellow pepper, sun dried tomatoes and a TON of garlic and still, bland. The sauce just did not have any taste. I used the oil from the sun dried tomatoes to brown my chicken, as well as added salt and pepper, but the chicken needed way more seasoning. Bummer, another recipe canned.

Slider-Style Mini Burgers

These did not work for my family at all. Scaled it down to make 12, called for 1/2 cup mayo, put less the 1/4 cup and the mayo was all I could taste - not good. Bummer, was hoping this could be come a new add in to the rotation since it is easy to prepare. Oh well, sometimes you win, sometimes you lose...

Fluffy Pancakes

Didn't have enough of my Trader Joes Pancake mix so I searched for an easy mix I could whip up and came across this one. Very good, family really liked it, think I no longer need to buy a mix in a box. Thanks for this great recipe!!

I used left over pork I had from the other night when I made Simple Carnitas in the crockpot. I though it was ok, my family ate it, and didn't complain, so its that's always a big plus.

Chicken Milano

My sauce never thickened up. The taste was good, but it was a VERY thin sauce. Sliced my chicken up put it over pasta and "watered" it down with sauce - it just didn't work. Family voted thumbs down.

ehh.. wasn't great, wasn't worth making again. I used revised measurements, marinated for a day and a half. I will say the chicken was very moist, the taste for our family was nothing overwhelming, nothing "must make again".

Chicken Riggies II

Prior to adding the cream, this was tasting great. I did increase tomato sauce to one cup. Started to add the cream - 1 pint is waaaayyy to much in my opinion. Once I realized it was overpowering the other ingredients, I stopped. Tried to reduce the sauce without much sucess. Unfortunalty the over abundance of cream took over the wonderful taste it had prior to adding. Next time I'll start with a cup of cream and add more if I think it needs it. My family thought this was very bland tasting. Will give it one more shot by tweaking it a bit.

Lime Cilantro Rice

Good. My family liked it. I used instant rice and just added the cilanto and lime right before serving. A little salt and pepper as well. Didn't add the zest, didn't want it too limey tasting. Will make again for sure.

Cottage Cheese, Avocado, and Black Bean Salsa

Like it - I halved the cottage cheese, but still used a whole avocado, one tomato, most of a can of black beans, no corn, and only a few spoonfuls of salsa. Very yummy.

Roasted Brussels Sprouts

First time ever with brussels sprouts - some of the outside leaves that fell off where awesome when I took them off the pan, but the sprouts themselves, not so much. No really sure what people are talking about when they say the inside was creamy - not on mine. Cooked them for 30 minutes and they were starting to get rather dark, so I believe they were cooked long enough. My neighbor said I should have scored the bottoms, if, and thats a big if, I try them again I will score to see if the insides get cooked a bit more. My kids wouldn't eat them, and my hubby, who loves veggies, left some on the plate.

Chicken with Chipotle

Not really sure what happened. Had boneless chicken breast, cooked them up first, added sauce. The sour cream seemed to separate, didn't add much flavor to chicken even after letting it simmer for about 15 min or more. Looked nothing like the yummy pic of SunnyByrd. Sorry, wont be trying this again....

Peppered Bacon and Tomato Linguine

Not enough "stuff" everything was lost in all the pasta. Flavor was good, when you did get the bacon, and onion and tomatoes in a bite it was even better. Not sure that I'll make it that often, wow all the bacon grease!!! I have a feeling tomorrow it will really be tasty.
