I started learning a little about cooking from volunteering at the Elks Lodge. I am beyond basic at it, but am having fun. My wife is a much better cook when she wants to, but seems to prefer letting me take care of it for her.
My favorite things to cook
Abalone rolled and filled with jalapeno and monterey jack, Green chilli and chicken tamales, Omlets, Red velvet cake, Camarones ranchero.
My favorite family cooking traditions
Every spring I dive for abalone. We eat a few fresh and freeze a few for a big group pot luck. I am always the star of that.
My cooking triumphs
While deployed for the hurricane katrina tragedy, I made tamales and refried beans for christmas. Everyone enjoyed a homemade style dinner while they had to spend time away from home. It was a challenge to make traditional (as traditional as I can make) mexican dinner in Louisiana when you don't know where any of the markets are.

Tiramisu Layer Cake
This was really good. It takes a little while to make even with the boxed cake recipe, but it was fun. I had trouble with the topping, it never seemed to get fluffy enough and ran off at the cake a little. I didn't want to beat it too long, but probably needed to go longer. It seemed funny that my teenage son didn't like the coffee in it, because he is the only person in my family that drinks coffee. The recipe to make mascarpone I found in the reviews helped, because you can't buy it in the small town I live in. I will be making this again, often.

Mexican Wedding Cookies
These cookies ROCK. They were so good and so easy to make. I used cashews instead of almonds because I like them better. Tasted great. I will make these again often.

Heavenly White Cake
The almond extract has to go. It was way too stong and everyone commented about it. It was also a little dry. I was pretty disappointed.
